Entry Requirements

This course is aimed at persons in food businesses who require a thorough understanding of the theory and practical application of HACCP based food safety management systems. Participants must have a good knowledge of hygiene standards through either formal qualifications or relevant work experience.

On completion of the training course participants should be able to:
• Understand the role of Prerequisite Hygiene (PRP), and Operational PRP’s in a HACCP based food safety management system
• Describe the requirements of Food Safety Management incorporating HACCP Standards
• Understand the principles of HACCP and how these are applied within a food safety and quality management system.

The 2-day training workshop covers the following topics:

Food Safety Management Controls
Overview of Pre-requisite Hygiene Control
Supplier Control
HACCP – Origins, legislation, benefits etc.
HACCP Plan – Application, Risk Assessment & Development
HACCP Plan – Implementation

The training course will be delivered by trainers from the Teagasc Food Research Centre, Ashtown. All tutors have relevant qualifications and extensive experience.
