Food standards, once implemented, must be maintained. This course is designed to equip participants with the capacity to effectively audit food safety and quality management systems either within their own company or those of their suppliers. The course also ensures participants have the knowledge to manage a programme of audits in compliance with relevant standards or legislation.

2 Days plus 1/2 day audit assessment written exam

Entry Requirements

The programme is aimed at food industry personnel with responsibility for evaluating food safety controls and systems (standards or legislation), consultants involved in auditing, and Competent Authority staff.

Participants must have a good knowledge of HACCP and food safety principles, through either a formal food science qualification and/or relevant professional experience.

The course also provides the capacity to audit against legal requirements.
The course provides for those involved in managing an internal audit programme, performing internal, supplier or third party audits.

This two day programme covers the following topics:
•Customer, internal and regulatory requirements for food standards auditing:
•General interpretation of requirements of international and national food safety and quality management standards e.g. BRC, ISO, Bord Bia.
•Developing audit procedures and checklists
•Conducting an audit
•Identification and evaluation of non-conformances
•Auditing as a continuous improvement tool

The training course will be delivered by trainers from Teagasc Food Research Centre, Ashtown.
All tutors have relevant qualifications and extensive experience in auditing food safety and quality management standards.

Assessment / Certification
Assessment is by means of a written examination and submission of a work related project on system auditing.
